Arugula Pesto and Sweet Potato Turkey Burgers

Turkey burgers are a staple every few weeks in our home because they are easy, everyone likes them, and I can batch cook them on the grill.

Changing up flavors and ingredients in your staple meals can give it a whole new life.

That’s exactly what happened to my traditional turkey burgers.  They got a glow up this week that I know you’re going to love! Give them a try and tag me if you love them @ginajonesrdn.

Arugula Pesto and Sweet Potato Turkey Burgers

Ingredients: Pesto: 3 oz Basil 1/2 cup arugula (loosely packed)  2-3 garlic cloves  1/4 cup EV Olive oil Salt to taste  Blend until semi-smooth consistency  Burgers: 1 lb lean ground turkey  1/2 large sweet potato diced  1/2 sweet onion finely diced 

1/4 cup (more if you prefer) of pesto mixture 

1/4 tsp Sea Salt

1/2 tsp Garlic powder

1 tbsp Parsley flakes 


  • Add ground turkey to a large bowl. Then add spices, onions, sweet potatoes, and pesto. 

  • Using hands combine completely until everything is well incorporated. 

  • Form into patties 

  • Grill on medium low heat and turn occasionally until Internal temperature reaches 165° or using the same method pan fry using coconut oil. 

  • Serve with your favorite vegetables and crispy potatoes for a balanced meal.
