A New Adventure & Vanilla Chocolate Chip Energy Bites

Nutrient dense, gut-healing energy bites to kick off my new webpage and blog!

I have now restarted this blog post five times, first day jitters I guess so bare with me! Let me start by introducing myself. I'm Gina and my life revolves around FOOD...literally. Food intolerances and allergies led me to huge diet changes years ago, I am a Functional Medicine Registered Dietitian and Nutritionist and I am the founder and owner of an allergen friendly food company Crunchy Kitchen. I spend most of my day talking about food, posting about food, making food, and trying to convince my daughters to eat food. So what can I say, blogging about food was the next logical step! I know first hand how important it is to fuel your body with nutrient dense, quality foods that leave you feeling satisfied. And with the holidays around the corner it can be hard to get those nutrients in as we keep spreading ourselves thinner and thinner.

This is one of my new favorite nutrient-packed, on-the-go snacks for work, car, or even a decadent treat for an afternoon pick me up. As a nutritionist I'm always on the look out for brands I can trust and products that I love that are beneficial for my clients and myself.  I will always share products and brands that I use in my daily life.

What makes these energy bites great is that they are filled with healthy fats and protein (almonds, coconut oil, collagen) that help keep you full and give you lasting energy. The collagen also has a fantastic added benefit of gut healing properties-especially for those that have autoimmune diseases or GI symptoms, and the allergen-friendly chocolate chips add a bit of sweetness and decadence and are high in iron from the cacao. This is a treat that won't leave you feeling deprived, I promise!

Vanilla Chocolate Chip Energy Bites


Ingredients:

(Makes approximately 10 bite size pieces)

1/2 Cup pure almond butter

1 handful raw almonds chopped

1 Tablespoon chia seeds

1-2 Scoops Vital Proteins Collagen Peptides (I used vanilla but chocolate blackberry would be great too!)

1-2 Tablespoons coconut oil

2 Tablespoons Enjoy Life chocolate chips

Pinch of sea salt


Process: Combine all ingredients except chopped almonds and chocolate chips, mix together well. Stir in chopped almonds and chocolate chips Spoon onto parchment paper Refrigerate for 1 hour to set
