Grain Free Granola

Paleo Friendly and Keto adaptable

 



I LOVED cereal as a kid, like ate it 2-3 times daily during my early vegetarian days (insert face palm here). But after starting a grain free diet about 6 years ago, cereal and granola has been hard to come by. This recipe is super quick and easy, my 2 year old helped me make it! It was perfect as a snack, and even held up well in almond milk for a true nostalgic feel for me ;)


This granola is loaded with healthy fats to support brain health, curb cravings, and support nutrient absorption. Slightly sweet and salty the way granola should be! This can easily be made keto friendly by eliminating the honey and cranberries (texture will very slightly).


 

Oven Baked Grain Free Granola

Ingredients:

2 cups lightly packed unsweetened coconut flakes (I like these)

1 cup roughly chopped almonds

1/4 cup almond meal

1/2 cup raw shelled pumpkin seeds

1/2 cup raw sunflower seeds

1/4 cup honey

1/3 cup melted coconut oil

Pinch sea salt

1/2 tsp ground ginger

1/4 dried cranberries (optional)


Process:

Preheat oven to 350 degrees F.

Line a baking pan with parchment paper or silicone mat.

In a large bowl combine almonds, almond meal, pumpkin seeds, sunflower seeds, salt and ginger until all is well incorporated.

In a separate bowl melt coconut oil and add honey. Pour this coconut oil and honey mixture over the dry granola mix. Mix well.

Evenly spread mixture onto prepared baking sheet. Bake for about 20-30 minutes or until golden brown- stirring mixture occasionally. Watch the mixture closely after about 15 minutes, because the coconut flakes can start to burn quickly.

Let granola cool completely, then add dried fruit as desired.


This grain free, Paleo, granola is great for cereal, yogurt toppings, or straight out of the container for a midday snack.
